  • 1 ½ cups graham cracker crumbs
  • 32 ounces cream cheese
  • ½ cup sugar
  • ½ cup light brown sugar
  • 6 large eggs
  • ½ cup rolled oats
  • 5 tablespoons unsalted butter
  • ½ cup all purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a springform pan.
  2. In a bowl, prepare the streusel by mixing flour, oats, brown sugar, cinnamon, and melted butter until crumbly; chill.
  3. Toss sliced apples with brown sugar and cinnamon; set aside.
  4. For the crust, mix graham cracker crumbs with sugar, spices, and melted butter; press into the pan and bake for 9–10 minutes.
  5. Lower oven temperature to 325°F (160°C). Beat cream cheese with sugars until smooth; mix in sour cream and vanilla.
  6. Add eggs one at a time while mixing gently. Pour batter over cooled crust and layer apples followed by streusel.
  7. Bake using a water bath for about 1 hour and 10–15 minutes until set but slightly jiggly in the center.
  8. Cool gradually inside the oven with the door ajar before refrigerating overnight.
