  • 1½ tsp baking powder

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 cups peeled, diced apples
  • ½ cup brown sugar
  • ½ cup flour
  • 1 tsp cinnamon
  • ¼ cup cold butter, cubed
  • 1 apple, peeled and finely diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ cup water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch baking pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt together.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and sour cream or yogurt.
  4. Gradually add dry ingredients to wet mixture until combined. Fold in diced apples.
  5. Pour batter into the prepared pan and spread evenly.
  6. For the crumb topping, mix brown sugar, flour, and cinnamon; cut in cold butter until crumbly. Sprinkle over batter.
  7. Bake for 40–45 minutes or until a toothpick comes out clean.
  8. In a small saucepan over medium heat, combine diced apple, butter, brown sugar, cinnamon, and water. Cook until apples are soft and mixture thickens slightly (about 5–7 minutes).
  9. Once the cake has cooled completely, drizzle the warm apple mixture over it before serving.
