  • 150 g granulated sugar (divided)
  • 4 egg yolks
  • 600 ml milk (dairy or plant-based)
  • 1 tbsp cornstarch
  • 2 tsp vanilla bean paste
  • Salt

Instructions

  1. Prepare the Apples: Peel and thinly slice the apples. Combine apple slices with 150 g granulated sugar and 1 tsp salt in a mixing bowl.
  2. Cook the Apples: In a saucepan over medium heat, cook the apple mixture for about 20 minutes until soft but not mushy. Let cool slightly.
  3. Make the Vanilla Custard: Whisk together egg yolks, 50 g granulated sugar, 1/4 tsp salt, and 1 tbsp cornstarch in a bowl. Heat milk until just below boiling; gradually whisk into the egg mixture. Return to heat and stir until thickened (10-15 minutes). Stir in vanilla bean paste.
  4. Assemble: In a baking dish, layer half of the cooked apples followed by half of the custard. Repeat layers and refrigerate for at least one hour before serving.
