- 2 lb boneless skinless chicken thighs
- 6 garlic cloves, thinly sliced
- 1 piece ginger (3 inches), finely chopped
- 1 bundle scallions, divided into whites and greens
- 4 tsp kosher salt
- Freshly ground black or white pepper, to taste
- 10 cups water
- 8 oz dried ramen noodles or dried curly noodles
- 1 cup carrot, cut into thin matchsticks
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
- Crispy chili oil, to taste
Instructions
- Gather and chop all ingredients: garlic, ginger, scallions, and carrots.
- In a large pot, bring water to a boil. Add chicken thighs, salt, and pepper; simmer for about 15–20 minutes until cooked.
- Remove chicken; shred into bite-sized pieces. Add garlic, ginger, and scallion whites back to the pot; simmer for an additional 5 minutes.
- Add noodles and carrots; cook according to package instructions until tender.
- Stir in soy sauce, black rice vinegar, and toasted sesame oil. Return shredded chicken to the pot with scallion greens; adjust seasoning if necessary.
