  • 1 pound boneless chicken breast, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 cup sliced mushrooms
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snow peas
  • 3 tablespoons chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mushroom-based sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • 2 cloves minced garlic

Instructions

  1. Marinate chicken in soy sauce and cornstarch for about 15 minutes.
  2. Whisk together chicken broth, soy sauce, mushroom-based sauce, sesame oil, ginger, and garlic in a separate bowl; set aside.
  3. Heat a wok or large skillet over medium-high heat. Add oil and stir-fry marinated chicken until cooked through (5-7 minutes). Remove from pan.
  4. In the same pan, add more oil if needed and stir-fry mushrooms, broccoli, bell peppers, and snow peas until tender yet crisp (3-5 minutes).
  5. Return the chicken to the pan and pour in the prepared sauce. Stir well and cook for another 2-3 minutes until heated through.
  6. Serve hot over steamed rice or noodles.
