Ingredients
- 3 cups butternut squash, peeled, seeded, cubed
- 340 g Brussels sprouts, trimmed and halved
- 225 g bow tie pasta
- 340 g cooked smoked sausage or turkey sausage
- 5 cloves garlic, minced
- 2 tablespoons butter
- Olive oil, salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Toss the butternut squash with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until tender.
- On another baking sheet, toss the Brussels sprouts with olive oil, salt, and pepper. Roast for 20-30 minutes until crispy.
- Cook bow tie pasta in salted boiling water until al dente. Drain and reserve some pasta water.
- In a large skillet over medium heat, sauté sliced smoked sausage until browned; remove from skillet.
- In the same skillet, cook garlic until fragrant, then add butter to melt. Toss in the cooked pasta with reserved water.
- Add roasted vegetables and sausage back to the skillet; mix well.
