  • 2 pounds boneless skinless chicken breasts
  • 3 ounces thinly sliced turkey slices
  • 6 cups fresh arugula or baby spinach
  • 1 cup cherry tomatoes
  • 4 ounces crumbled gorgonzola cheese
  • 1 avocado (sliced)
  • 1/3 cup toasted seeds (such as sunflower, pumpkin, sesame)
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 tablespoons fresh chopped basil
  • 1 tablespoon fresh chopped oregano
  • Kosher salt + pepper to taste
  • 1/4 cup olive oil (for additional dressing)
  • 1/4 cup balsamic vinegar (for additional dressing)
  • 2 tablespoons fresh chopped basil (for additional dressing)
  • 2 teaspoons Dijon mustard

Instructions

  1. Prepare the peaches by tossing them in balsamic vinegar and honey.
  2. Marinate the chicken with olive oil, basil, oregano, salt, and pepper.
  3. Preheat the grill to medium-high heat and grill the peaches for about 2-3 minutes on each side.
  4. Grill the marinated chicken and turkey slices until cooked through.
  5. In a large bowl, combine arugula, cherry tomatoes, gorgonzola cheese, grilled peaches, sliced chicken, torn mozzarella or burrata cheese, and avocado slices.
  6. Serve with a homemade vinaigrette made from olive oil, balsamic vinegar, basil, and Dijon mustard.
