- 4 ripe peaches (quartered)
- 2 pounds boneless skinless chicken breasts
- 3 ounces thinly sliced turkey slices
- 6 cups fresh arugula or baby spinach
- 1 cup cherry tomatoes
- 4 ounces crumbled gorgonzola cheese
- 1 avocado (sliced)
- 1/3 cup toasted seeds (such as sunflower, pumpkin, sesame)
- 1/2 cup balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon olive oil
- 2 tablespoons fresh chopped basil
- 1 tablespoon fresh chopped oregano
- Kosher salt + pepper to taste
- 1/4 cup olive oil (for additional dressing)
- 1/4 cup balsamic vinegar (for additional dressing)
- 2 tablespoons fresh chopped basil (for additional dressing)
- 2 teaspoons Dijon mustard
Instructions
- Prepare the peaches by tossing them in balsamic vinegar and honey.
- Marinate the chicken with olive oil, basil, oregano, salt, and pepper.
- Preheat the grill to medium-high heat and grill the peaches for about 2-3 minutes on each side.
- Grill the marinated chicken and turkey slices until cooked through.
- In a large bowl, combine arugula, cherry tomatoes, gorgonzola cheese, grilled peaches, sliced chicken, torn mozzarella or burrata cheese, and avocado slices.
- Serve with a homemade vinaigrette made from olive oil, balsamic vinegar, basil, and Dijon mustard.
