- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional, for heat)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Clean the mushrooms with a damp paper towel and halve them if large.
- In a mixing bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and optional red pepper flakes.
- Toss the mushrooms in the marinade until evenly coated. Let sit for about 5 minutes.
- Spread the mushrooms in a single layer on the baking sheet.
- Roast for 20–25 minutes, stirring halfway through until tender and caramelized.
