  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp paper towel and halve them if large.
  3. In a mixing bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and optional red pepper flakes.
  4. Toss the mushrooms in the marinade until evenly coated. Let sit for about 5 minutes.
  5. Spread the mushrooms in a single layer on the baking sheet.
  6. Roast for 20–25 minutes, stirring halfway through until tender and caramelized.
