Ingredients

Scale
  • 16 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup mashed ripe bananas
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 3.4 oz package instant banana pudding mix
  • 2 cups cold milk
  • 1 cup whipped topping
  • Caramel sauce
  • Nilla wafers
  • Fresh banana slices (optional)

Instructions

  1. Preheat the oven to 325°F. In a mixing bowl, combine softened cream cheese, granulated sugar, eggs, sour cream, and vanilla extract. Beat until smooth. Pour into a lined springform pan and bake for 40–45 minutes until set. Cool completely.
  2. For the banana cake layer, preheat the oven to 350°F. Whisk together flour, baking powder, baking soda, and salt in one bowl. In another bowl, cream softened butter and granulated sugar until fluffy; add eggs one at a time along with mashed bananas and vanilla extract. Alternate adding dry ingredients with buttermilk until combined. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  3. For the pudding layer, whisk together instant banana pudding mix with cold milk until smooth; fold in whipped topping gently.
  4. Assemble by layering banana cake, half of pudding mixture, cheesecake layer, remaining pudding mixture, and top with the second banana cake layer.
  5. Decorate with caramel sauce and optional Nilla wafers or fresh bananas before serving.
