  • ½ cup BBQ sauce
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil (divided use)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 avocado (diced)
  • ½ cup canned corn (drained)
  • ½ cup black beans (rinsed and drained)
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • ¼ cup shredded cheese (cheddar or Monterey Jack)
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine diced sweet potatoes with olive oil, salt, black pepper, paprika, and garlic powder. Toss well.
  3. Spread seasoned sweet potatoes on a baking sheet and roast for about 25 minutes until tender.
  4. Season chicken breasts with remaining olive oil and BBQ sauce. Cook in a skillet over medium heat for 6-7 minutes on each side until cooked through.
  5. Slice the cooked chicken and assemble the bowl by layering roasted sweet potatoes first, followed by chicken strips and your choice of toppings.
