- 1 pound boneless skinless chicken breasts
- ½ cup BBQ sauce
- 2 medium sweet potatoes
- 2 tablespoons olive oil (divided use)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 1 avocado (diced)
- ½ cup canned corn (drained)
- ½ cup black beans (rinsed and drained)
- ¼ cup diced red onion
- 2 tablespoons chopped fresh cilantro
- ¼ cup shredded cheese (cheddar or Monterey Jack)
- 2 tablespoons sliced green onions
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine diced sweet potatoes with olive oil, salt, black pepper, paprika, and garlic powder. Toss well.
- Spread seasoned sweet potatoes on a baking sheet and roast for about 25 minutes until tender.
- Season chicken breasts with remaining olive oil and BBQ sauce. Cook in a skillet over medium heat for 6-7 minutes on each side until cooked through.
- Slice the cooked chicken and assemble the bowl by layering roasted sweet potatoes first, followed by chicken strips and your choice of toppings.
