Ingredients

  • ⅓ cup olive oil
  • Salt & pepper to taste
  • 8 large prawns (prepared with shells still on but vein removed)
  • 2 cloves of garlic
  • 12 chillies
  • 1 Tbsp fresh parsley
  • Juice and zest of 1 lemon

Instructions

  1. Prepare your BBQ grill by lighting firelighters and adding charcoal until glowing white.
  2. In a pan, heat olive oil and sauté minced garlic and sliced chillies for about 2 minutes. Add lemon juice and zest.
  3. Marinate the prawns with half of the garlic mixture for at least 15 minutes.
  4. Ensure your grill is hot; place the prawns on the grill and cook for 1-2 minutes per side until pink and charred.
  5. Drizzle remaining sauce over cooked prawns before serving.
