  • 1 pound beef stew meat
  • 1 medium yellow onion, chopped
  • 3 ribs celery, chopped
  • 3 carrots, chopped
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 6 cups low sodium beef or chicken broth
  • ¾ cup pearl barley
  • 1 tablespoon olive oil
  • ¾ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 2 bay leaves

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add beef cubes seasoned with salt and pepper; brown on all sides. Remove and set aside.
  2. In the same pot, sauté onion, celery, carrots, and mushrooms until softened (about 5-6 minutes). Stir in garlic and thyme; cook for another minute.
  3. Return the beef to the pot along with any juices. Add broth and bay leaves; bring to a simmer. Cover and cook on low heat for 45 minutes.
  4. Stir in pearl barley; cover and simmer for an additional 45-60 minutes until both barley and beef are tender.
  5. Adjust seasoning as needed before serving garnished with fresh parsley.
