  • 1 can black beans (15 oz), drained
  • 2 cups beef stock
  • 1 can tomatoes (15 oz, Fire Roasted with juice)
  • 1 can tomato paste (6 oz)
  • 1 jalapeño (seeded and minced – optional)
  • 1 tablespoon oregano (dried)
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper (ground)
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 tablespoon chili powder
  • 1 tablespoon garlic (minced)
  • Sour cream
  • Cilantro
  • Cheese (shredded)

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess grease.
  2. Add the chopped onion and bell pepper; sauté until tender.
  3. Stir in the kidney beans, pinto beans, black beans, tomatoes with juice, tomato paste, beef stock, and spices.
  4. Bring to a simmer and let cook for at least 45 minutes on low heat for flavors to meld.
  5. Serve hot with desired toppings.
