- 800 g sugar
- 1 l water

- Use a vegetable peeler to carefully remove the yellow skin from the lemons, avoiding the bitter pith.
- Place the lemon peels in the mason jar and cover them with high-proof neutral spirit. Gently mash with a wooden spoon to release flavors.
- Seal the jar tightly and store it in a dark area, shaking daily for at least one week (up to one month).
- Create a sugar syrup by dissolving sugar in water over low heat; let it cool completely.
- Strain the lemon-infused spirit through cheesecloth into another container, discarding solids.
- Mix the cooled sugar syrup with the strained spirit, adjusting sweetness as desired.
