  • 1/4 cup neutral oil

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 & 1/2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/4 tsp cardamom (optional)
  • 1 cup chocolate chips (optional)
  • 3/4 cup toasted walnuts (or pecans, optional)
  • 1 tbsp raw sugar (or granulated sugar, to top bread)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
  2. Mix dry ingredients in a medium bowl: flour, sugars, baking soda, baking powder, salt, and spices.
  3. In a large bowl, whisk together melted butter, oil, sugars, sour cream, eggs, and vanilla.
  4. Shred zucchini and remove excess moisture using paper towels.
  5. Combine wet ingredients with dry ingredients gently; fold in zucchini and optional mix-ins.
  6. Pour batter into the prepared pan and sprinkle with raw sugar on top.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 15 minutes before transferring to a wire rack.
