  • 16 oz rotini pasta
  • 1 lb ground beef
  • Salt and pepper (to taste)
  • 1/2 cup chopped dill pickles
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 2 tbsp pickle juice

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain, rinse under cold water, and set aside to cool.
  2. In a skillet over medium heat, brown ground beef until fully cooked. Season with salt and pepper. Drain excess fat and let cool.
  3. In a large mixing bowl, combine cooled pasta, cooked beef, pickles, lettuce, tomatoes, onion, and cheddar cheese.
  4. In a separate bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, salt, and pepper until smooth.
  5. Pour dressing over the pasta mixture and toss gently until coated.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
