  • 1 tablespoon dry apple juice
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth

  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil

  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped (mixed colors are great!)

Instructions

  1. Marinate chicken with soy sauce, dry apple juice, and cornstarch in a bowl for 10-15 minutes.
  2. Mix all sauce ingredients in a small bowl; set aside.
  3. Heat oil in a skillet over medium-high heat and sear the marinated chicken until lightly browned.
  4. Stir-fry ginger, garlic, onion, and bell peppers until fragrant and slightly softened.
  5. Add the prepared sauce, stirring until thickened; return chicken to skillet and combine everything well.
