Ingredients
- 2 1/2 cups all-purpose flour, plus more for rolling
- 1 tsp salt
- 3/4 cup unsalted butter, cold and cut into pieces
- 1/4 cup shortening (butter flavor Crisco)
- 1/4 cup ice water
- 12 ounces fresh blackberries
- 1/2 cup sugar
- 2 tsp Instant Clearjel thickener (or 1 Tbsp cornstarch)
- juice of 1/2 lemon
- 1 cup confectioner's sugar, sifted
- water for thinning
Instructions
- Make the crust: Blend flour and salt in a food processor. Add cold butter and pulse until grainy. Gradually add ice water until dough forms. Chill for at least two hours.
- Prepare the filling: In a saucepan, combine blackberries, sugar, lemon juice, and thickener; cook over medium heat until thickened.
- Preheat oven to 350°F (175°C). Roll out one piece of chilled dough to fit your baking sheet; add blackberry filling on top.
- Roll out the second piece of dough and place it over the filling; seal edges and brush with egg wash.
- Bake for about 40 minutes or until golden brown. Cool completely before glazing.
