Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices cooked turkey bacon, crumbled
- 1 medium tomato, diced
- 8 large lettuce leaves (romaine or butter)
- 1/4 cup chopped green onions (optional)
Instructions
- Boil the eggs in a pot covered with cold water until boiling. Remove from heat, cover, and let sit for 10 minutes.
- Transfer the boiled eggs to an ice water bath for about 5 minutes to cool. Peel and chop the eggs.
- In a medium bowl, mix chopped eggs, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Gently fold in crumbled turkey bacon and diced tomato.
- Lay out lettuce leaves on a clean surface and spoon egg salad mixture into the center of each leaf.
- Optionally sprinkle with green onions. Fold in sides of lettuce leaves over the filling and roll up tightly.
- Serve immediately or refrigerate until ready.
