  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices cooked turkey bacon, crumbled
  • 1 medium tomato, diced
  • 8 large lettuce leaves (romaine or butter)
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Boil the eggs in a pot covered with cold water until boiling. Remove from heat, cover, and let sit for 10 minutes.
  2. Transfer the boiled eggs to an ice water bath for about 5 minutes to cool. Peel and chop the eggs.
  3. In a medium bowl, mix chopped eggs, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.
  4. Gently fold in crumbled turkey bacon and diced tomato.
  5. Lay out lettuce leaves on a clean surface and spoon egg salad mixture into the center of each leaf.
  6. Optionally sprinkle with green onions. Fold in sides of lettuce leaves over the filling and roll up tightly.
