  • ⅓ cup (38g) confectioners' sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons unsalted butter (cut into cubes and chilled)
  • 1 large egg yolk
  • 1 tablespoon heavy cream
  • ½ teaspoon pure vanilla extract
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the crust by mixing flour, sugar, salt, and butter until crumbly. Add egg yolk and cream; mix until combined.
  2. Press dough into a tart pan and chill for 30 minutes before baking for 20 minutes until golden brown. Let cool.
  3. For the lemon curd: whisk together lemon zest and juice with eggs and honey in a saucepan over medium heat. Stir until thickened.
  4. For the blueberry filling: cook blueberries with honey and cornstarch in another saucepan until slightly thickened.
  5. Assemble by pouring lemon curd into cooled crust and layering blueberry filling on top. Refrigerate for at least 4 hours before serving.
