- 2 lbs chicken breast, cubed
- 1 lb shrimp, peeled and deveined
- 1 lb chicken sausage, crumbled
- 2 cups short-grain white rice
- 4 tbsp olive oil
- 3 garlic cloves, crushed
- 1 tsp red pepper flakes
- 1 tbsp chili powder
- 1 tsp oregano
- Salt and pepper to taste
- 1 quart chicken stock
- Juice and zest of 1 lemon
- Pinch of saffron threads
- 1 bay leaf
- ½ bunch parsley, chopped
- 1 red bell pepper, chopped
Instructions
- Marinate the cubed chicken with chili powder, oregano, olive oil, salt, and pepper for at least 15 minutes.
- In a large skillet or paella pan over medium heat, sauté crushed garlic and red pepper flakes in olive oil until fragrant. Add rice and toast for about 3 minutes.
- Pour in the chicken stock along with lemon juice, saffron threads, and bay leaf. Simmer uncovered for about 20 minutes until most liquid is absorbed.
- Push rice aside in the pan; add marinated chicken and cook until browned (about 3 minutes). Stir in crumbled chicken sausage and chopped bell pepper; cook for another 5 minutes.
- Finally, add shrimp; cook until they turn pink (about 3–4 minutes). Remove bay leaf before serving.
- Garnish with parsley and lemon zest before serving on a platter.
