  • 2 lbs chicken breast, cubed
  • 1 lb shrimp, peeled and deveined
  • 1 lb chicken sausage, crumbled
  • 2 cups short-grain white rice
  • 4 tbsp olive oil
  • 3 garlic cloves, crushed
  • 1 tsp red pepper flakes
  • 1 tbsp chili powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 quart chicken stock
  • Juice and zest of 1 lemon
  • Pinch of saffron threads
  • 1 bay leaf
  • ½ bunch parsley, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Marinate the cubed chicken with chili powder, oregano, olive oil, salt, and pepper for at least 15 minutes.
  2. In a large skillet or paella pan over medium heat, sauté crushed garlic and red pepper flakes in olive oil until fragrant. Add rice and toast for about 3 minutes.
  3. Pour in the chicken stock along with lemon juice, saffron threads, and bay leaf. Simmer uncovered for about 20 minutes until most liquid is absorbed.
  4. Push rice aside in the pan; add marinated chicken and cook until browned (about 3 minutes). Stir in crumbled chicken sausage and chopped bell pepper; cook for another 5 minutes.
  5. Finally, add shrimp; cook until they turn pink (about 3–4 minutes). Remove bay leaf before serving.
  6. Garnish with parsley and lemon zest before serving on a platter.
