Ingredients

  • Chicken sausage (1 lb, casings off)
  • Flour tortillas (6, taco size)
  • Pepper jack cheese sticks (6)
  • Creole seasoning (6 tsp)
  • Crawfish tails (12 oz)
  • Half-and-half or heavy cream (1½ cups)
  • Olive oil (2 tbsp)
  • Minced garlic (2 cloves)

Instructions

  1. Warm tortillas to make them pliable. Place chicken sausage, pepper jack cheese stick, and 1 tsp of Creole seasoning in each tortilla. Roll tightly and secure with toothpicks.
  2. Heat oil in a frying pan to 350°F. Fry chimichangas for 4–5 minutes until golden brown and crispy. Drain on paper towels.
  3. In another pan, heat olive oil over medium heat. Sauté minced garlic until fragrant, then stir in flour and add crawfish tails along with Cajun seasoning. Pour in half-and-half or cream and simmer until thickened.
