  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup BBQ sauce (substitute bourbon BBQ sauce with regular BBQ sauce mixed with apple juice if necessary)
  • 1 cup shredded cheddar cheese
  • 4 sub rolls
  • 8 slices crispy turkey bacon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until just combined.
  3. Form the mixture into 16-20 meatballs (about 1.5 inches in diameter).
  4. Heat olive oil in a skillet over medium heat and brown the meatballs for 5-7 minutes.
  5. Pour BBQ sauce over the browned meatballs and let simmer for 10 minutes.
  6. Toast sub rolls on a baking sheet in the oven for about 5 minutes.
  7. Assemble each sub with 4-5 meatballs, extra sauce, cheese, and turkey bacon.
  8. For melty cheese, return subs to the oven for an additional 2-3 minutes.
