  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup pure maple syrup
  • 1 cup heavy cream
  • 3 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 375°F (190°C). In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly.
  2. Stir in beaten egg, vinegar, and cold water until dough forms. Roll out the dough and fit it into a 9-inch pie dish; chill.
  3. In another bowl, whisk together eggs, pumpkin puree, sour cream, apple cider, vanilla extract, spices, and maple syrup until smooth; pour into prepared crust.
  4. Bake for about 70 minutes or until set but slightly jiggly in the center; cool completely before refrigerating for two hours.
  5. Whip heavy cream with sugar until soft peaks form; spread over the cooled pie and brûlée the top using a kitchen torch.
