  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb stock
  • 2 sprigs rosemary
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a heavy-duty pot over medium-high heat. Sear lamb shanks on all sides until golden brown; remove from pot.
  2. In the same pot, add onion, carrots, celery, and minced garlic. Cook for about 5 minutes until softened; stir in tomato paste and cook for an additional minute.
  3. Deglaze the pot with apple vinegar, scraping up any browned bits with a wooden spoon.
  4. Return lamb shanks to the pot; add stock and rosemary sprigs. Season with salt and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours until lamb is tender.
  6. For the garlic puree (optional), roast garlic cloves at 400°F for about 30 minutes until soft; blend with olive oil until smooth.
  7. Serve braised lamb shanks over roasted garlic puree, garnished with fresh herbs if desired.
