Ingredients
- ¾ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons fresh parsley (finely chopped)
- 2 tablespoons fresh basil (finely chopped)
- 2 tablespoons Castelvetrano olives (chopped)
- 2 tablespoons Kalamata olives (chopped)
- 1 clove garlic (grated)
- ½ teaspoon dried oregano
- ¼ teaspoon flaky sea salt (or more to taste)
- ¼ cup parmesan cheese (freshly grated)
- Fresh warm bread (for serving)
Instructions
- In a shallow bowl, combine ¾ cup of extra virgin olive oil with 2 tablespoons of balsamic vinegar.
- Finely chop 2 tablespoons each of fresh parsley and basil, along with 2 tablespoons of chopped Castelvetrano and Kalamata olives. Add these to the bowl.
- Grate 1 clove of garlic into the mixture and add ½ teaspoon of dried oregano and ¼ teaspoon of flaky sea salt. If desired, grate ¼ cup of parmesan cheese on top.
- Stir all ingredients thoroughly until well combined. Serve immediately with warm crusty bread.
