Ingredients
- 4 slices center-cut turkey bacon
- 1 white onion, finely diced
- 1 poblano or bell pepper, finely diced
- 2 cloves garlic, minced
- 1 pound raw turkey breakfast sausage
- 1 packet chili seasoning
- 28 oz can fire-roasted crushed tomatoes
- 3–4 cups beef broth (to desired consistency)
Instructions
- In a Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and drain on paper towels.
- In the same pot, sauté the onion and bell pepper in the remaining grease for 2-3 minutes until softened; then add garlic and cook for another minute.
- Add the turkey sausage, breaking it apart with a wooden spoon, and cook until browned.
- Combine all remaining ingredients: chili seasoning, fire-roasted crushed tomatoes, and desired amount of beef broth. Chop the cooked turkey bacon and return it to the pot.
- Bring to a boil, then reduce heat to low, cover, and let simmer for 45-60 minutes before serving hot.
