  • 6 medium Campari tomatoes, quartered
  • 1/2 avocado, pitted and sliced
  • 1/4 cup slivered red onion
  • 2 balls burrata, drained
  • torn fresh basil leaves
  • 2 tablespoons fruity extra virgin olive oil
  • 1 tablespoon chicken sparkling grape juice vinegar or rice vinegar
  • kosher salt and freshly ground black pepper

Instructions

  1. Slice the Campari tomatoes into quarters and pit and slice the avocado.
  2. Sliver the red onion to add a mild crunch.
  3. On a serving plate or in bowls, arrange the sliced tomatoes, avocado, and red onion.
  4. Drain excess water from burrata and gently break them in half before adding to the salad.
  5. Sprinkle torn basil leaves on top.
  6. Drizzle with extra virgin olive oil and vinegar, then season with salt and black pepper to taste.
