  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (adjust to taste)
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, add vegetable oil and cook chicken pieces until browned (5-7 minutes). Remove and set aside.
  2. In the same skillet, melt the butter and sauté onions until translucent (3-4 minutes). Add garlic and ginger; stir for about a minute until fragrant.
  3. Stir in ground coriander, garam masala, turmeric, and chili powder. Cook for another minute to toast the spices.
  4. Return chicken to the skillet; combine well with spice mixture. Cover and simmer on low heat for 15 minutes, stirring occasionally.
  5. Garnish with crushed coriander seeds or chopped cilantro before serving.
