  • 3 1/2 to 4 oz cubed fresh mozzarella cheese
  • 2 tbsp chopped fresh basil
  • 1/3 cup chopped sun-dried tomatoes (not packed)
  • 2 eggs
  • 2 1/2 tbsp grape-seed oil (or extra virgin olive oil)
  • 1 1/4 cups buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×4 inch bread pan.
  2. In a mixing bowl, combine all-purpose flour, bread flour, baking powder, baking soda, and salt. Mix well.
  3. Stir in fresh basil, mozzarella cheese, and sun-dried tomatoes until evenly distributed.
  4. In another bowl, whisk together eggs, grape-seed oil, and buttermilk until blended.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Transfer the dough into the greased bread pan and spread evenly.
  7. Bake for 40-45 minutes or until a toothpick comes out clean when inserted.
