  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Chopped green onions, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Brown chicken thighs skin-side down for 5-7 minutes until golden.
  3. Flip the chicken, then add soy sauce, brown sugar, garlic, ginger, and chicken broth. Bring to a gentle boil.
  4. Cover and simmer on low heat for 20 minutes until the chicken is tender.
  5. While the chicken cooks, rinse jasmine rice under cold water. Cook rice by combining with water in a separate pot; bring to boil, cover, and reduce heat to low for 15-20 minutes until fluffy.
  6. For thicker broth (optional), mix cornstarch with water to create a slurry and stir into the broth for an additional few minutes.
  7. Serve sliced chicken over rice with broth ladled on top; garnish with green onions and cilantro.
