  • 500g boneless and skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cut chicken into bite-sized pieces and season lightly with salt and pepper.
  2. In a mixing bowl, combine soy sauce, sesame oil, garlic, ginger, and brown sugar. Marinate the chicken for 10 minutes.
  3. Rinse jasmine rice under cold water until clear. In a saucepan, bring 2 cups of water to boil; add the rinsed rice. Cover and simmer for about 15 minutes or until water is absorbed.
  4. Heat oil in a large pot over medium-high heat. Add marinated chicken and sauté until caramelized (5-7 minutes).
  5. Pour in chicken broth and rice vinegar; bring to a boil then reduce to simmer.
  6. Mix cornstarch with water; stir into the broth to thicken. Simmer an additional 5 minutes.
  7. Serve caramelised chicken over jasmine rice with sliced green onions on top.
