- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 1/4 cup sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat the oven to 300°F (150°C).
- In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper.
- Place beef short ribs in a shallow dish and pour marinade over them. Marinate for at least 30 minutes or overnight.
- Heat oil in a Dutch oven over medium-high heat. Sear each side of the ribs until browned (about 2-3 minutes per side). Pour marinade over the ribs.
- Cover and slow roast in the oven for about 3 hours until tender. Remove ribs and mix cornstarch with water to make a slurry; add this to the pot and simmer until thickened (about 5 minutes). Brush the glaze over the ribs and broil for an extra 5-10 minutes until caramelized.
