- 1 Tbsp butter or olive oil
- 1 medium onion, diced
- 1 garlic clove, minced
- 1 celery stick, chopped
- 1 lb carrots, peeled and diced
- 1 lb potatoes, peeled and diced
- 2 ½ cups low-sodium vegetable broth
- 1 tsp Italian herbs
- ¼ tsp dried thyme
- ¼ tsp dried parsley (optional)
- ⅛ tsp black pepper, plus more to serve
- ½ tsp fine salt, plus more to taste
- 2–3 Tbsp fresh parsley, chopped
Instructions
- In a large pot over medium heat, melt the butter or olive oil. Add the diced onion with a pinch of salt and pepper; sauté for about 5 minutes until softened. Stir in the minced garlic for another minute.
- Add the diced carrots, potatoes, celery, Italian herbs, salt, and black pepper. Stir well and cook for an additional 2–3 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer covered for about 20 minutes.
- Allow soup to cool slightly before blending about one cup until smooth (using a stand blender or hand blender).
- Return blended soup to pot; stir well to combine. Adjust seasoning as needed and mix in fresh parsley before serving.
