  • 1 Tbsp butter or olive oil
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • 1 tsp Italian herbs
  • ¼ tsp dried thyme
  • ¼ tsp dried parsley (optional)
  • ⅛ tsp black pepper, plus more to serve
  • ½ tsp fine salt, plus more to taste
  • 23 Tbsp fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, melt the butter or olive oil. Add the diced onion with a pinch of salt and pepper; sauté for about 5 minutes until softened. Stir in the minced garlic for another minute.
  2. Add the diced carrots, potatoes, celery, Italian herbs, salt, and black pepper. Stir well and cook for an additional 2–3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer covered for about 20 minutes.
  4. Allow soup to cool slightly before blending about one cup until smooth (using a stand blender or hand blender).
  5. Return blended soup to pot; stir well to combine. Adjust seasoning as needed and mix in fresh parsley before serving.
