- 3 corn cobs
- 200 g red grape tomatoes
- 200 g yellow grape tomatoes
- 1 avocado

- 1 tbsp Dijon mustard
- 1 tbsp maple syrup
Instructions
- Prepare vegetables by slicing red onions into thick rounds and husking the corn.
- Heat your grill or grill pan over medium-high heat. Brush onion slices with 1 tablespoon olive oil and grill both onions and corn for about 10-12 minutes until charred.
- While grilling, halve the grape tomatoes and dice the avocado; chop the cilantro.
- In a small bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, and maple syrup for the dressing.
- Once grilled items are cooled, cut kernels off the corn cobs and combine all ingredients in a large mixing bowl. Drizzle with dressing and toss gently.
