Ingredients

Scale
  • 2 tablespoons extra virgin olive oil, divided
  • 1 large onion, halved and sliced (about 2 cups)
  • 1 teaspoon vegetarian Worcestershire sauce
  • 0.75 teaspoon dried thyme
  • 0.5 teaspoon ground pepper, divided
  • 5 cups cauliflower slices (¼ inch thick; about 1 medium head)
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.5 cup shredded Gruyère cheese

Instructions

  1. Preheat your oven to 450°F (232°C) and coat a large rimmed baking sheet with cooking spray.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté sliced onions for about 5 minutes, then add Worcestershire sauce, thyme, and pepper. Reduce heat and cook until onions are golden brown (10-15 minutes), adding water if necessary.
  3. Arrange cauliflower slices on the baking sheet in a single layer. Mix remaining olive oil with garlic powder and salt; brush over the cauliflower.
  4. Roast the cauliflower for 10 minutes until tender.
  5. Remove from the oven, top with caramelized onions and Gruyère cheese, then return to the oven until the cheese melts (2-3 minutes).
