- 2 pounds fresh spinach, washed and trimmed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
- ¼ teaspoon red pepper flakes, optional
- 2 large eggs, lightly beaten
- ¼ cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, about 5 minutes. Add minced garlic and sauté for an additional minute.
- Gradually add spinach until wilted; drain excess liquid and let cool.
- In a bowl, mix ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and beaten eggs.
- Fold in the cooled spinach mixture and transfer to the prepared baking dish. If desired, top with breadcrumbs.
