  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • ½ green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tablespoons ketchup
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 8 slices thick bread (Texas toast or sourdough works great)
  • 2 cups shredded cheddar cheese (or mozzarella/pepper jack blend)
  • 2 tablespoons butter, softened
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and bell pepper; cook for 3–4 minutes until softened. Stir in minced garlic and cook for an additional minute.
  2. Add ground beef; cook until browned. Drain excess grease.
  3. Stir in tomato sauce, ketchup, chili powder, smoked paprika, salt, and pepper. Let simmer for 8–10 minutes until thickened.
  4. Preheat oven to 375°F (190°C). Lightly butter one side of each slice of bread and arrange them on a baking sheet with the butter side down.
  5. Spoon the sloppy joe mixture evenly over each slice of bread. Top generously with shredded cheese.
  6. Bake for 8–10 minutes or until cheese is bubbly and golden brown.
