  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and pierce the potatoes multiple times with a fork. Rub with olive oil and season with salt and pepper.
  3. Place potatoes on a baking sheet and bake for about 45 minutes until tender.
  4. While baking, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  5. Add taco seasoning with water per packet instructions; simmer for about 5 minutes.
  6. Once potatoes are baked, let them cool slightly, then cut a slit on top and gently squeeze open.
  7. Fill each potato with seasoned beef and top with shredded cheddar cheese.
  8. Return filled potatoes to oven for another 5 minutes until cheese melts.
  9. Finish by adding sour cream, green onions, tomatoes, olives, and any additional toppings desired.
