  • 1/3 cup diced yellow onion
  • 1/2 teaspoon minced garlic
  • 1/2 cup uncooked long grain brown rice
  • 1 1/2 cups low sodium vegetable broth
  • Kosher salt and black pepper to taste
  • 2 cups shredded zucchini (excess liquid squeezed out)
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup plain Greek yogurt

Instructions

  1. In a medium-sized saucepan, heat olive oil over medium-high heat. Sauté diced onion and minced garlic until softened.
  2. Add uncooked brown rice, season lightly with salt and pepper, and toast for about one minute.
  3. Pour in low sodium vegetable broth, bring to a boil, cover, reduce heat to low, and simmer for approximately 40 minutes until liquid is absorbed.
  4. Stir in shredded zucchini and cheeses until melted and well combined.
  5. Remove from heat and mix in Greek yogurt; adjust seasoning if needed before serving.
