  • 8 bone-in, skin-on chicken thighs
  • 1 cup pearl couscous
  • 1 yellow onion, diced
  • 4 celery stalks, diced
  • Fresh parsley and dill
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • Your favorite seasoning salt
  • Water (enough to cover chicken)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cover chicken thighs with water and bring to a boil. Reduce heat and simmer for about 1 hour.
  2. Add diced onion, celery, seasoning salt, parsley, salt, and pepper to the pot. Continue simmering until the chicken is tender (about another hour).
  3. Remove chicken from the pot and stir in pearl couscous to the broth. Cook according to package instructions.
  4. Shred the chicken into bite-sized pieces after cooling slightly and return to the pot with fresh dill and lemon juice.
  5. Ladle soup into bowls and garnish with extra dill if desired. Serve with dukkah or crackers on the side.
