- Canned white beans (like cannellini)
- Chicken broth

Instructions
- Dice onion, garlic, carrots, and celery into small pieces. Rinse and drain the canned white beans.
- Heat olive oil in a Dutch oven over medium-high heat. Season chicken thighs with salt and pepper. Sear until golden brown on both sides (about 5-7 minutes). Remove and set aside.
- In the same pot, sauté diced onion, garlic, carrots, and celery until softened (about 5 minutes).
- Return seared chicken to the pot along with rinsed beans, chicken broth, thyme, paprika, and bay leaves. Stir well to combine.
- Bring to a boil then reduce heat to low; cover with a lid and let simmer for about 30-40 minutes until chicken is cooked through.
