Ingredients
- 1 small yellow onion, diced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 4 strips turkey bacon, chopped
- 3 cups chicken broth
- 2 cups diced Yukon Gold potatoes
- 1 ½ cups cooked shredded chicken
- 1 ½ cups corn (fresh, frozen, or canned)
- 1 cup half & half
- ⅓ cup sour cream
- Salt and pepper to taste
- ½ tsp dried thyme
- ½ tsp dried parsley
Instructions
- In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot with the rendered fat, sauté onions, celery, and garlic until softened.
- Stir in flour to coat the vegetables and gradually add chicken broth while stirring continuously.
- Add diced potatoes along with thyme and parsley; season with salt and pepper. Simmer until potatoes are tender.
- Stir in shredded chicken and corn; cook for another 5–7 minutes.
- Reduce heat to low; gently mix in half & half and sour cream. Simmer before serving.
