Ingredients

  • Shredded cooked chicken
  • Instant rice
  • Cream of chicken soup
  • Sour cream
  • Frozen diced onion and bell pepper blend
  • Diced tomatoes with chilies
  • Chicken broth
  • Fajita seasoning
  • Shredded Mexican blend cheese

Instructions

  1. Preheat oven to 350°F and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large bowl, combine shredded chicken, instant rice, cream of chicken soup, sour cream, frozen vegetables, diced tomatoes (including juice), chicken broth, fajita seasoning, and half the cheese.
  3. Pour the mixture into the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
  4. Bake for 35 to 45 minutes until rice is tender.
  5. Remove from oven, sprinkle remaining cheese on top, and return to bake until cheese is melted.
