Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, carrots, and celery for 5 minutes until softened.
  2. Add minced garlic and sliced mushrooms; cook for another 5 minutes until mushrooms are tender.
  3. Stir in dried thyme and rosemary until well combined.
  4. Pour in chicken broth and bring to a boil.
  5. Add rinsed wild rice; reduce heat to simmer, cover, and cook for 30 minutes or until the rice is tender.
  6. Stir in shredded chicken and heavy cream; heat through for about 5 minutes.
  7. Season with salt and pepper to taste before serving.
