- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 6 cups chicken broth
- 1 cup wild rice, rinsed
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion, carrots, and celery for 5 minutes until softened.
- Add minced garlic and sliced mushrooms; cook for another 5 minutes until mushrooms are tender.
- Stir in dried thyme and rosemary until well combined.
- Pour in chicken broth and bring to a boil.
- Add rinsed wild rice; reduce heat to simmer, cover, and cook for 30 minutes or until the rice is tender.
- Stir in shredded chicken and heavy cream; heat through for about 5 minutes.
- Season with salt and pepper to taste before serving.
