  • 2 cups chicken pieces
  • 1 large onion, finely sliced
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 ½ cups basmati rice
  • 3 cups water or chicken broth
  • green cardamom pods
  • cloves
  • cinnamon stick
  • salt to taste
  • fresh cilantro leaves for garnish

Instructions

  1. Rinse basmati rice under cold water until clear. Soak for 30 minutes.
  2. In a large pot, heat oil over medium heat and sauté sliced onions until golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies; cook for 1 minute.
  4. Stir in cardamom pods, cloves, and cinnamon stick before adding the chicken pieces. Cook until browned.
  5. Drain soaked rice and add to the pot with water or broth and salt. Bring to a boil.
  6. Reduce heat to low, cover tightly, and simmer for 20 minutes until liquid is absorbed and rice is tender.
  7. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with cilantro.
