  • 1 tablespoon ghee or butter
  • 1 small onion, roughly chopped
  • 34 garlic cloves, skin on
  • 2 inch ginger, roughly chopped
  • 15 fresh cilantro stalks (stems & leaves chopped separately)
  • 1 bay leaf
  • 12 Kashmiri dried chilies
  • 8 black peppercorns
  • 1 lb bone-in skinless chicken thighs & drumsticks
  • 3/4 teaspoon salt
  • 4 cups warm water
  • 1/4 teaspoon garam masala
  • 1 tablespoon heavy cream (optional) or use milk

Instructions

  1. Gather all ingredients and prepare them before starting.
  2. In a large pot over medium heat, melt the ghee.
  3. Add onion, garlic, ginger, cilantro stems, and spices. Sauté for about a minute without browning.
  4. Add chicken pieces and sear lightly on each side. Sprinkle with salt and add enough water to submerge the chicken.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 35 to 45 minutes.
  6. Strain the broth using a colander; set aside the solids.
  7. Return the broth to the pot and shred or chop the chicken before adding it back along with cilantro leaves and seasonings.
  8. Simmer gently for another five minutes before serving hot with lemon slices and scallions.
