Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp dried thyme or Italian seasoning
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet over medium heat, heat olive oil. Season chicken breasts with salt, pepper, and thyme; cook until golden brown on both sides (5-6 minutes each). Remove from skillet.
- In the same skillet, sauté minced garlic for 1 minute. Add mushrooms; cook until softened (about 5 minutes). Stir in spinach; cook until wilted (2-3 minutes).
- Pour heavy cream and chicken broth into the skillet; bring to a simmer and cook until slightly thickened (3-4 minutes).
- Place cooked chicken in the baking dish; pour the creamy vegetable sauce over the top. Sprinkle with mozzarella and Parmesan cheeses.
