  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, heat olive oil. Season chicken breasts with salt, pepper, and thyme; cook until golden brown on both sides (5-6 minutes each). Remove from skillet.
  3. In the same skillet, sauté minced garlic for 1 minute. Add mushrooms; cook until softened (about 5 minutes). Stir in spinach; cook until wilted (2-3 minutes).
  4. Pour heavy cream and chicken broth into the skillet; bring to a simmer and cook until slightly thickened (3-4 minutes).
  5. Place cooked chicken in the baking dish; pour the creamy vegetable sauce over the top. Sprinkle with mozzarella and Parmesan cheeses.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
