  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper in a bowl. Coat the chicken well and refrigerate for at least 15 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until golden brown and fully cooked (165°F/75°C). Let it rest before slicing into strips.
  3. For tzatziki sauce, combine Greek yogurt, grated cucumber (squeezed dry), olive oil, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Mix well and adjust seasoning as needed.
  4. Assemble your bowls with a base of rice or quinoa topped with sliced chicken and assorted fresh vegetables. Drizzle generously with tzatziki sauce.
