  • 1 lb boneless chicken thighs
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves garlic, smashed
  • 1 tablespoon cooking oil
  • 1 medium zucchini, cut in half lengthwise and then sliced
  • 1 tablespoon oyster sauce (optional)
  • Ground black pepper, optional

Instructions

  1. Cut the chicken into bite-sized pieces and mix marinade ingredients in a bowl. Marinate for 30 minutes.
  2. Heat cooking oil in a wok over medium-high heat.
  3. Add garlic and marinated chicken to the pan, cooking until no longer translucent (about 2 minutes).
  4. Remove chicken from the pan and set aside; keep the sauce.
  5. Stir-fry sliced zucchini until tender (approximately 5 minutes).
  6. Return chicken to the pan, add oyster sauce if desired, and stir-fry everything together for another 2-3 minutes.
  7. Serve hot over rice or noodles.
